The File Save As dialog has all the options you need

The File->Save As dialog in Word offers various ways to save a document and when you select "Text only", you can choose an encoding that suits your needs. There are several Mac encodings available, you just have to experiment a bit.

IMO it is not so much a question of Mac vs. MS-Word as a question of what applcation on the Mac you want to use the files with. If you also have Word on the Mac, no conversion at all is required (in principle). If you want to use the files with some other program, you should check to see which formats it can read or import. If you also have Word on the Mac, no conversion at all is required (in principle). If you want to use the files with some other program, you should check to see which formats it can read or import. Word can generate files in a wide variety of formats, and most WP programs can read a variety of formats. Given the dominant position of Word, most major applications can also read or import documents in Word format.
Generally speaking, the only real difficulty with moving WP files from a MS machine to a Mac (or vice versa) is that the character sets of the fonts differ slightly between the two systems. That means you may find some characters replaced by other characters or an empty rectangle on the Mac (for example, composed fractions). There's nothing you can do about that except proofread the texts carefully and make corrections as necessary (although the problem will probably disappear in the future with general support for Unicode).
Generally speaking, RTF should be a reasonable choice for transferring files between applications if you want to retain the formatting, and plain text (ASCII) if you don't need to retain the formatting. ▲ Collapse

1) The above only applies to Western European languages.
2) The actual names of the menu options may differ from the ones indicated above because I just assumed what they might be in English (I have a German version of MS Office).
