福州话:jiu ai hun ngan (差不多是这样吧).粉干是粗米粉,糟菜是芥菜.

"顾名思义,梅干菜是晒干了的。晒干以前就是酸菜了。一般人俗稱的梅乾菜,其實也是一道正統的客家菜,稱為鹹菜乾。首先必須將鹹菜挑選出來,曬個好幾天直到完全乾燥為止。再將之放入菜籃,選四、五級束成一綑,然後放入甕內加以保存,隨時可以取來料理,方便又實惠,最合客家人務實的個性。現在在一般餐館中常見的梅乾扣肉,就是一種簡單的推廣.在所有客家曝菜的過程中,鹹菜應該是最為人津津樂道的了。在以前,有些客家人會用一個特大號的圓桶,裡頭放進一層曬了半天的芥菜,然後鋪上一層粗鹽,由小孩子兩三個人﹙剛才說過那個圓桶是特大號的﹚轉來轉去踏個不停。踏了一會兒,又鋪層菜 ,撒了鹽,繼續不停地踏,如此反覆一層又一層,其實是很辛苦的.等到芥菜在盐水了泡了一段时间(大概一个月吧),就变成一棵棵水灵水灵的酸菜。要是想要长久保存,可以把它们挂在竹竿上晒个一两天。等水分基本褪干之后再把它们一棵棵捆起来放到陶瓮里。晒干之后的酸菜就是我们叫的糟菜了."

雪里蕻,又称雪里红、雪菜、春不老,学名 Brassica juncea (L.) Czern. et Coss. var. crispifolia Bailey,是芥菜的一种。
在中国北方,其茎叶用来制做成同名的咸菜。腌好的雪里蕻颜色保持深绿,可用来炒肉,炖豆腐等。先腌製后烘干的也被称为梅菜。
