Utilise un logiciel de reconnaissance optique des caractères (OCR) de type Readiris pro ou OmniPage. Mais il faut vraiment qu'il y ait beaucoup de texte dans les .jpg pour que ça vaille le coup.

You will, of course, be doing well to get the text out - to create a word-processor document automatically from the scanned jpeg would require much more advanced software. ▲ Collapse

In my experience the text will need to be black on white and the font size at least 12pt.
It is no problem to convert a jpg-file to black on white and to increase the size of letters. What really matters is the image quality (i.e. the number of pixels).
