Typing French and Spanish accents in Yahoo

Hello,
I am located in Canada and when I send French and Spanish email messages to Europe using Yahoo, the recipient receives an email full of mangled text. I have tried changing the encoding to Western Europe but that doesn't seem to have changed anything. I am sorry if this has already been discussed at length in this forum - I am new to the forum and when I looked through the posted comments, I didn't come across anything similar.
Can someone help?
