Princess Grace of Monaco (Grace Kelly)
Princess Caroline of Moncao/Princess of Hanover
Princess Stéphanie of Monaco
Prince Albert of Monaco
As far as I know, all three children of Grace Kelly and Prince Rainier III of Monaco speak fluent French and English, and Princess Caroline also speaks German.

The prince of the Neetherlands speaks Dutch, his wife Maxima is Argentine and speaks Spanish. Their two daughters will be raised bilingualy; the prince has said that Amalia, the eldest, is learning both languages, and that sometimes the little girl mixes Spanish and Dutch.

Famous Sri-Lankan writer (The English Patient) who now lives in Canada.
He was born in Colombo, Ceylon (now Sri Lanka), but when his parents separated in 1954, he moved to England with his mother. He then immigrated to Canada in 1962. Critics have often commented on his unique and imaginative writing style, about how this perhaps stems from writing in his "second" language.

Jorge Luis Borges(1899-1986) ... he was raised bilingual.
Copied from The Modern World:
His father, Jorge Guillermo Borges, was a lawyer and a psychology teacher whose personal beliefs were founded in anarchy. His mother, Leonor Acevedo de Borges, was a proud woman, descended from a long line of soldiers and freedom fighters; (...).
His parents spoke and read English, for his paternal Grandfather, Colonel Francisco Borges, had married an Englishwoman from Staffordshire named Francis Haslam. Although Colonel Borges was shot and killed in 1874, Grandmother Fanny was around to tell the young Jorge Luis – “Georgie” – many stories of the wild frontier days. Borges has often remarked that his Grandmother’s dry English wit was the origin of his concise style. (...) She would also read him English magazines; as well as securing Mrs. Tink, another Englishwoman, as his nanny. Borges would later comment that the household was so bilingual that he was not even aware that English and Spanish were separate languages until later in his childhood.

Felipe, Elena and Cristina de Borbón y Grecia, the children of King Juan Carlos I de Borbón and Queen Sofía de Grecia are supposed to speak English with their mother in addition to Spanish. Queen Sofía speaks at least English, German (which seems to be the language spoken in her family when she was a child, and not Greek), Greek, Spanish, and French.
elle_bi Italy Local time: 01:50 English to Italian + ... | | Miguel Bosé and.... | Aug 10, 2005 |
Pop singer and actor Miguel Bosé was raised bilingual, his father being the famous Spanish "torero" Luís Dominguín and his mother the Italian actress Lucia Bosé. There was a period I am sure he was a genuine bilingual, nowadays he speaks Spanish a little better than Italian, due to the fact that he lives in Madrid most of the time. Also, when speaking Italian, he runs into some typical interferences.
Talking of famous Spaniards, Catalan tenor Josep (José) Carreras springs to my mind as well: he was raised bilingual in Catalan and Spanish of course, but I'm referring to his usage of Italian: he wasn't raised bilingual in that respect, but he's been speaking Italian since his early childhood due to his affection to opera, and I can assure you that when he speaks it he just sounds 100% Italian.

When I saw her acting in Spanish movies, I would never guess she was born in California.
Daughter of Charles Chaplin and Oona Chaplin.
Has had long time relationship with Spanish director Carlos Saura. Granddaughter of playwright Eugene O'Neill (1888-1965) and the singer Charles Chaplin Sr. (1864-1901). Oona Chaplin (1926-1991), Eugene O'Neill's daughter, was married to Charlie Chaplin from 1943 until his death in 1977. (http://www.imdb.com/name/nm0001036/bio)

cello Spain Local time: 01:50 Spanish to English + ... | | A few more for you.. | Aug 11, 2005 |
Some of these people I'm sure about, others not, if anybody knows for sure maybe they can put a post about it,but here goes...
Kirk Douglas and Natalie Wood; their parents were Russian, they both speak/spoke Russian and English.
Henri Troyat, the French writer and member of the Academie Francias (sorry about the accents)also had Russian emigrant parents - so that would be French-Russian.
The actor Anthony Quinn was bilingual Spanish-English as is his son Lorenzo Quinn.
The actor Benicio del Toro and the actor/singer Ricky Martin are, I think, bilingual Spanish-English(not just very good at both languages)
And here are the 'possibles':
I was reading in a cinema magazine about the Spanish actress
Elsa Pataki, who as well as Spanish speaks Romanian and has a Romanian grandmother, so she is a possible Spanish-Romanian bi-lingual.
Timothy Mo and Kazuo Ishiguro are both well known contemporary writers (in English) Mo's background is Hong Kong (Cantonese) and Ishiguro's parents are Japanese, but I don't know to what extent they speak or write those languages.
Hope this gives you a few more leads to follow!
Best of luck with the research

luka Spain Local time: 01:50 English to Spanish + ... | | Kathleen Turner, Julio Iglesias | Sep 14, 2005 |
She speaks very good Spanish. I think she was raised in Cuba.
Julio Iglesias speaks Spanish and English and his partner is Dutch, possibly his youngest children are trilingual.
Orla Ryan Ireland Local time: 00:50 | | Jodie Foster | Sep 20, 2005 |
... apparently speaks French fluently.
I remember seeing Kristin Scott-Thomas (mentioned above) in Petites Coupures a number of years ago, excellent performance. She looked very much at ease with acting in a foreign language.
I have Cinema Paradiso on DVD at home and apparently the old projectionist character was a French actor dubbed into Italian.
Of course, there is Penelope Cruz (Spanish-English), Claudia Schiffer and Heidi Klum (German-English).. and so on...
