If anyone can offer guidance, please help. I set up my site to accept responses to forms using Matt Wright's formmail:

http://www.scriptarchive.com/readme/formmail.html

and everything seemed to go well. Translated the site into 12 languages and everything seemed good to go, EXCEPT any NON-ENGLISH letters come out as a string of nonsense characters.

Argh! How can I fix this?!?

Please help if you can:
