Im a relatively new user of wordfast. In the documentation tagged documents are mentioned. What is a tagged document? How are they different to work with than normal documents such as word, for exmaple?

Like htm-files, files from dtp-software etc. are text-documents, where the formatting tags are normally visible. In files for Word etc. only the content is visible, no tags. Instead of a tag a word would be bold or underlined.
When translating you do not want to translate the tags, only the content. So the tags should be "unvisible" to the software you use for translating.
Different tools manage this using different technics.
Tags are marked as "untranslatable text". If the tool cannot do this automatically, you must do it manually or prepare the file using an appropriate tool.
