disagree  Wiard Sterk: I do not agree, that would be brown bread in english, or wholemeal at a pinch. Dark refers to the rye (and possibly malt) content that gives the bread a dark appearance.

dark rye bread

Dark bread tends to be rye bread and is indicated as such in english. The reference is random, but you can find many more on the web. Rye is best (by far) with Salmon. This is most likely what the text refers to.

neutral  writeaway: agree that rye would taste nice but it's not the correct translation, despite all the confidence posted. rye is rogge. donker brood is not made exclusively with rye flour /sadder still, I also know these things.

multigrain bread or dark bread


Explanation:
Donker brood, "dark bread" would imply that it's either a multigrain or wholegrain bread. Unfortunately, sometimes they add burned malt to the dough to give it the dark and healthy look.
I think if you use dark bread it would do the trick.
