I don't agree with those who've used "son". Gramatically, that implies cows---in general, in other words: "are cows fat?", in English.

"M" used the definite article -- "the"-- which implies reference to some specific cows---not just cows in general. Therefore, "the cows" means "las vacas"....followed by the remainder, as stated. ¿las vacas están gordas?---or, ¿están gordas las vacas?.
