Sodium Hydroxide Reduction Process
Step 1
Hydroxide (-OH) has a negative electrical charge. It reacts with the cystine amino acid by attracting the single hydrogen (H) atom on the carbon atom. This carbon atom is adjacent to the CH 2 group on the protein chain.

Step 2
The oxygen atom now has two hydrogen atoms. This forms a molecule of water (H2O).

Step 3
The loss of the hydrogen results in the formation of a double bond between the carbon atom, the CH 2 group and the first sulphur atom. The break is irreversible and cystine cannot be re-bonded.

Re-bonding
Step 4
In the re-bonding step, it is possible that the first sulphur atom, which now has a negative charge, reacts with the water molecule to form a -SH group that splits off the protein. We now have the amino acid dehydroalanine formed on the first keratin protein chain and cystine on the second chain.
