Взаимодействие воды с пищевыми биополимерами – их гидратация – одна из важнейших проблем пищевой индустрии.
Инициируемые ультразвуком полезные реакции в пищевых средах основаны на механизмах действия кавитации в процессах реструктурирования гидратных оболочек ионов в истинных растворах, *диспергирования фаз золей*.
Объектом воздействия являются связи, образованные диполь-дипольными и ион-дипольными взаимодействиями (Fig.1).
В данной работе исследовалось воздействие ультразвука на функционально-технологические свойства мясного и молочного сырья, их водосвязывающую (ВСС) и водоудерживающую (ВУС) способность, вязкость, гелеобразование и дисперсию пищевой системы.
