assister au départ des excursions
Explanation:
It means to be present at the time the people go off on their excursions (from which point on, they will have another accompanier) — "Bye for now, have a lovely visit, see you this evening!", rather than just looking up from your newspaper and saying "The coach ought to be over there somewhere..."

I think the sense of 'to see off' here is probably best expressed as 'to be present when they leave' — we don't know to what extent they are 'accomanied' to that point; they will probably in fact make their own way to the front of the hotel, say; it's just the courtesy thing of actually being there when they leave (and of course also when they return!) — which is the bit that often gets overlooked.

Saluer le départ des excursionnistes

Explanation:

see off verb (tr, adverb)
1. to be present at the departure of (a person making a journey)
When you see someone off, you go with them to the station, airport, or port that they are leaving from, and say goodbye to them there.

2. to go with (another) to the place from which that person is to leave, as on a journey

Example sentence(s):
  • Ben had planned a steak dinner for himself after seeing Jackie off on her plane.

agree  Tony M: I think that's a nice idea, as it places the emphasis back on the PEOPLE (i.e. those 'excursionnistes') rather than the mere event.

disagree  Tony M: That would be a counter-sense: the whole point about 'seeing off' is that you stay behind, you don't go with them! BTW, 'fraid your link doesn't work (err. 404) :-(

disagree  AllegroTrans: The ST does not say anything about accompanying the travellers; i.e. you stay behind as Tony has said
