Explanation:
Even though it's not 'French', this expression is already widely accepted in France for pretty much the same thing; I think you'll find it hard to find a purely FR term to replace them. Not least because of the exoticism and sexiness of foreign words in the faddish world of gastronomie!

Sadly, none of the French chefs I know have anything to suggest; since the concept is an entirely anglo-saxon one, I doubt Escoffier or les Immortels foresaw this when they were defining the language of cooking!

  -> Yes, but as several of us have tried to point out to Asker, no precise equivalent FR term exists, as there is a lot of 'value' in using an EN term, in just the sam way as FR terms have a great deal more 'cachet' when used in EN

agree  Tony M: Yes... and it's not really the same as 'cuisine ouverte' — in our restaurant, we used to do 'frontcooking', but it was actually in the restaurant itself — there was an entirely separate kitchen as well.

neutral  Tony M: Yes, but that's not actually quite the same thing: there is still a nuance of a barrier between the dining room and the kitchen, which is almost totally removed in frontcooking. In cantines, it's not 'showcooking', but 'front...' — 'cuisine minute'

  -> Agree, it might be more of a "show" as you point out, but in cantines (as Chiffon suggests), they wouldn't really show-off their cooking skills? Anyway, it's always difficult to be sure without the full context!
