agree  Andycarruk: Singular would imply that one rudder controls many planes, clearly nonsensical. One (overly pedantic) point - rudders are foot operated... it wouldn't be very poetic if verisimilitude ruled though, would it?

Rudder as in the yawing control of an Air craft.


Explanation:
Rudder(S) system in an Aircraft, is one of the main, controls of the machine. Without them no yawing control can be applied. So the term; "The rudders of our planes are in the hands of champions." I believe would be The controls of our skies are in the hands of our heroes.
