There are all sorts of things that are said in British folklore to curdle milk - witches, the evil eye in general, evil spirits, pixies, etc. They usually do this by looking at the milk. So the (whatever creature they are) that are going to curdle the milk are summoned and their eyes bore into the udders (another metaphor) to curdle the milk before it even comes out of the cow.
