（2）烹调方法以蒸熟和稍微煎炸为主，务求保留食物本身的原味。上茶楼吃点心，香港人称之为「饮茶」， ... 肉丸除了味道要好，还讲究「爽口弹牙」(咬感有弹性、肉不黏牙)。

2)Though I think describing 猪肝弹牙 is a bit strange for me, I still believe that CHEWY TEXTURE could be used to describe all kinds of meats.

口感 could be translated as TEXTURE, but 弹牙 is only 1 kind of TEXTURES, there are a lot other textures.
So I assume it's not appropriate to translate 弹牙 as TEXTURE.
