Chinese term or phrase: 此君書不易楷,楷不易小
It is the 不易 that I am unsure about. In this sentence, does it mean "difficultly", "rarely", or something else?

English translation:不易=does not change
Explanation:
此君書不易楷,楷不易小
I think it means: This gentleman always writes in regular script, and always in small regular script.
For your reference.

neutral  Stanley Zhang: To correct Kathy Huang: The term "君" here does not mean "gentleman", it's just a polite title to a male adult in ancient China

Explanation:
I think the "易" here means "other than", and “不易” means "no other than"

Literally: He writes in no script other than the regular script, and in no regular script other than the small regular script
