Dr. med. habil. Max Daunderer....
Not sure whether the title should stay in Danish or be translated. If the latter, does anyone know what it should be? Google says the "habil" bit is the rough equivalent of D. Sc. and something else.

Explanation:
You can either leave it in Danish because this is a German term, there is no Dr.habil. degree in Denmark. Some countries use it as a more advanced level in comparison with a PhD, so I can suggest Professor.

Explanation:
I agree with other answerers that this typically a German degree and, therefore, futile to tranlsate it into other languages.
The German habilitation(a formal professorial qualification with thesis and exam) is commonly regarded as belonging to this category. However, in some German states, the Habilitation is not an academic degree, but rather a professorial certification ("facultas docendi") that the regarding person holds all formal qualifications to teach independently at a German university. In other German states, the "Habilitand" is awarded a formal "Dr. habil." degree. In some cases where such degree is awarded, the person concerned may add "habil." to his or her research doctorate such as "Dr. phil. habil." or "Dr. rer. nat. habil."
I will be reluctuant to designate the person as 'professor', however.
