Dutch term or phrase: grootkeukens
For want of any further context in previous jobs (recurring newsletter), I've been calling these "industrial kitchens" up to now. However, some examples are given here: hospitals and schools. Is there a generic term for them? Professional kitchens perhaps?

This is an interview with a couple who run a company that specialises in chopping fresh vegetables (salads, veg mixes, soup veg etc.).

De cliënteel bestaat uit delicatessenwinkels, grootkeukens en grote cateringbedrijven [...]

Question: Opvallend is uw bijna maniakale zorg voor de voedselveiligheid. Waarom?
Answer: Omdat heel wat grootkeukens (zeker van ziekenhuizen en scholen) en cateringbedrijven daaraan steeds meer belang hebben.

there are about 3 times as many Google hits on "professional kitchens" as there are on "industrial kitchens" - but I suppose it depends on the size of the kitchen...

one can also say "instititutional kitchens" for hospitals or schools,

to cover everything I would suggest "large-scale kitchens"

In this particular context, it seems "institutional kitchens" is the correct term. According to the author, it refers to "scholen, ziekenhuizen, bejaardentehuizen...)". Thanks a lot.
