Dutch term or phrase: servicebedrijf
This is from a manual for a gas-fired air heater:

'Testen in servicebedrijf:
- Open de gaskraan.
- Start het servicebedrijf door de servicetoets 10 seconden ingedrukt te houden, en controleer op het statusdisplay dat het toestel correct opstart en in laagstand gaat werken.
- Druk nogmaals op de servicetoets, en controleer op het statusdisplay dat het toestel correct in hoogstand werkt.
- Druk nogmaals op servicetoets, en wacht tot het toestel bedrijfsgereed is.'

They obviously don't mean service company;)

Would this be 'normal operation mode', or 'service mode' / 'service operation mode' ...?

One could use 'standard operating mode' if one needs to differentiate between various modes such as that and a test mode. Again, this is Eng-US.
