"Een goed gepasteuriseerd product kan onder koeling enkele maanden worden bewaard. Uiteraard moet dan besmetting met nieuwe bacteriën worden voorkomen. Het product dient dus van een hermetisch gesloten omhulsel te zijn voorzien, zoals een vacuümzak of een potdichtdarm.
