Context is a product information sheet for 'bakkersvet'. Various items listed e.g. product description, use, ingredients, packaging, storage conditions, shelf life. Under 'Toepassing':

Uitsluitend bestemd voor de verwerking in de bakkerij en/of in de professionele keuken. Transo[=merk]-vet is neutraal van smaak. Het vet leent zich erg goed voor mechanische verwerking. Geschikt voor diverse soorten zand-, wals- en spuitdegen.

Walsdeeg - rolled pastry???

Can only find one site that mentions the terms, where pastry margarine is described as 'An margarine for the preparations of 'wafel' and 'wals' dough, and to make crème.' (sic)

Explanation:
I'd suggest 'stiff dough' as opposed to 'soft dough'.

Stiff dough can be shaped by hand or used in moulds.

STIFF DOUGH.— Formulas of stiff dough contain less liquid and eggs and more flour than soft cookies. These cookies are often referred to as sliced or rolled cookies. The desirable finished product is crisp. When humidity becomes excessive, the cookies become moist and tend to soften up and lose their desirable crispness. Examples are peanut butter cookies and sugar cookies. Crisp cookies should be stored in a container with a loose-fitting cover.

Molded, Shaped and Pressed: To make these cookies, stiff dough is molded into shapes such as crescents, logs or balls. They can be pressed flat with a fork or the bottom of a glass. Cookies can also be made using a cookie press or gun.

I think that our \'speculaasjes\' are made of \'walsdeeg\'.
