Dutch term or phrase: De keuken in het totaal-bedrijf te zien
Op 21-jarige leeftijd, als souschef in Auberge de Kievit, kwam het besef dat er meer is dan alleen koken. De keuken in het totaal-bedrijf te zien werd een grotere uitdaging. Een eigen stijl van leiding geven, cijfermatig goed onderbouwd zijn en daarbij koken als passie en manier van leven zien, is naar zijn mening de basis voor het starten van een eigen bedrijf.

disagree  Adela Van Gils: er staat dat de keuken slechts een onderdeel is en dat het totaal-bedrijf veel meer factoren betreft, zoals leiding geven e.d.

Explanation:
Because, to him, there was more to it (his life/profession) than just cooking (and never leave the kitchen), the souschef wanted to broaden his view, to expand his horizon. He wanted to be able to manage or be responsible for "the whole process", to see the kitchen in the totality of the business, as a part of the restaurant (from honey to money, so to speak).
It gave him good enough reason to start his own restaurant business.

disagree  Adela Van Gils: zien is hier beschouwen en dat is consider /look at. Broaden staat er niet. Hij beschouwt het en vervolgens verbreedt hij zijn zienswijze. Beschouwen is net een stapje verder. Ik bedoel het positief. Bewustwording van wat je doet, werkt bij mij goed.
