According to a multi-lingual horse dictionary I found, it's middle piece. Middle-piece with a hyphen seems to be possible as well.

According to a multi-lingual horse dictionary I found, it's middle piece. Middle-piece with a hyphen seems to be possible as well.

agree  copheoske: Yes, the terms are used in the judging of show animals and not in the meat trade. Forequarter, middle piece and hindquarter.
