Only picture I can find of this is a bag made of what looks like bubble wrap, yet author defines kraakfolie as "technische term voor een folie die zich na het vacuümtrekken helemaal om de groente sluit."
Apparently keeping chicory at a high temperature (+12°C) and exposing it to light causes the yellow leaf edges to turn green.
Hetzelfde onderzoekscentrum heeft onlangs ook ontdekt dat witloof in flow pack beter houdbaar is. In deze verpakking liggen de kroppen naast elkaar in een kraakfolie. Bij hogere temperaturen en blootstelling [aan licht] trad groenverkleuring minder snel op. |
