I asked explanations to my customer who answered:

"Bin refers to interpolation method:The DVH (dose-volume histogram) is formed by binning the dose values inside the volume of the specified structure. The shape-based interpolation method is used to determine the structure shape."

Could anybody explain what "bin" means exactly here?

Explanation:
A conventional histogram consists of columns whose height corresponds to the data value with a certain range on the horizontal axis.
A similar use of bin is in radar: "range bins" are the segments into which the radar range is divided, e.g. 5-10 km, 10-15 km.
Mind you, I find your clients answer almost unintelligible...
