لحم الكتف
Explanation:
there is "rib joint fore", which is the meat right above the shoulder. And there is "rib joint middle" which is right behind it. Totally different from just "ribs".
And of course there is always the "rib joint" where you go and eat ribs, but that's another story.

Explanation:

the name of the cuts it depends from country to other and it could be ريش / ضلوع / لحم الكتف and this site has the English & Arabic Cuts and when saying Joint it means meat and rib joint has a commercial name : إنتركوت once again both Mohamed & Noha are correct because rib is ريش / ضلوع and as I said joint is لحم

Thank you Momahed & Raouf. Elie, ريش is the word used in Egypt, the popular one in restaurants but aslo Mohamed & Raouf 's terms are used. It varies from one country to another. Thank you.

agree  MALLAF: it's used in Syria too, I prefer to use رِيَشْ غنم pronounced (Riash) and not (Reesh)
