زبدة مخضوضة أو مخفوقة

Explanation:
ويتكون الزبد من القشدة عن طريق خفقه بقوة في حركات دائرية تصبح مزبدة حيث تتجمع كرات الدهون وتتماسك لتشكل الزبد وتترك سائل يسمي مخيض اللبن ويكون لونه مائلاً للصفرة ويعتبر منتجاً ثانوياً أيضاً. والزبد يحتوي علي 82.5% كحد أدني من الدهون، وكان يضاف في الماضي الملح للمحافظة عليها من تكون البكتريا حيث لم يكن الحفظ بالثلاجات منتشراً لكن اختلف الأمر الآن حيث يضاف الملح لإعطاء نكهة ومذاقاً لذيذاً لها.
