I am translating a recipe for a toasted ham and cheese sandwich(!) where Dutch cheese is used. What is dutch cheese exactly and how would you translate that into danish?

I noticed we had two at the same time, though mine is now later because I wanted to correct my typo. Edammer is the Danish name for the type of cheese from Holland

disagree  Carmela Heuber Prestia: Edam is Edam, Gouda is Gouda (specific types of cheese). This is just "hollandsk ost". Like you can't translate a french wine into "Chablis"

agree  Christine Andersen: There are several suitable Dutch cheeses - I like Leerdamer! The ones I know all have a certain 'Dutch' undertone, and do not have the 'Danbo' flavour of many Danish cheeses, delicious cold, but not suitable for heating up IMHO!

agree  Pernille Chapman: Perhaps you could include "fast ost" in brackets after "hollandsk ost"? I agree with Christine that it would be quite important not to use those Danish kinds which have the look and texture of melted plastic after heating!
