een langwerpige zachte, op een aubergine gelijkende, groente maar dan groen, smakelijk te bereiden.

Explanation:
Hi, a squash is edible (but a little boring), but a 'kalebas' is not, that is more for decoration. Ik zou het omschrijven zoals bovenstaand.
Groetjes, Marijke

I have actually grown them, and they grown very big very fast!

Zucchini

Explanation:
Okay Mollie, here we go again. All of the above answers have truths in them (confusing huh) BUT... I've done some more Web research and found that there are many different types of squash. This is what I came up with at the URL mentioned below: "Summer squash grows on nonvining bushes. There are many varieties having different fruit shapes and colors. The three main types include the yellow straight neck or crooked neck; the white, saucer shaped, scallop or patty pan; and the oblong, green, grey or gold zucchini. Winter squash grows on vining plants often sprawling 8 to 10 feet in every direction. The three common species are c. maximna, C. pepo and c. moschata: Varieties common to each species are respectively buttercup and blue habbard; acorn and spaghetti; butternut."

Zucchini is a very common used vegetable in Europe and in the US pumkin is being used more often (i.e. Pumpkin pie)

So evaluating... pumpkin (pompoen) and squash (zucchini and/or kalebas) are all used in dishes/meals. It depends on the context of your text.

courgettes

Explanation:

courgette ...

Explanation:
'squash' refers to an entire family of vegetables of the pumpkin family; there is no general term in Dutch: they are referred to individually (... well, as a subspecies); to complicate things further the green, oblong, soft cored and usually slightly bent vegetable you probably have in mind here is referred to by its French name 'courgette'; the Halloween veg is 'pompoen'; 'kalebas' is tropical and its outer hard layer is used as a container; I don't even know if the inside is edible
