I think this is just marketingspeak, and this would be my attempt at rendering that. (I mean, "sensor override technology"... just means switching the sensor off, doesn't it??!!)

I think "asservissement" would imply it was always controlled by the sensor rather than the opposite.

"Bypass du capteur" gets a few hits but personally I'd start wondering about which way I was translating...

I think the point is you can use the system having disabled the sensors. "Bypass" without saying what you are bypassing sounds a bit perilous to me.
