I think that's the term we'd probably use for a fold-away sink. Note that the 'flip-down' type is rather more specific, but I don't know if a special term exists in FR for this; perhaps you could try researching some FR caravanning sites, or caravan suppliers — I know that quite a few UK brands of caravan / motorhome are sold here in FR, so if you're lucky, you might even be able to cross-reference between descriptions of the same model.

That's really the whole point: here, you flip the sink down in order to use it, and flip it up again to stow it away, hence the idea of 'escamotable'
re: évier / lavabo
If this is UK EN, then 'sink' most usually implies 'évier'; however, if it is US, then I think they tend not to make the same distinction between kitchen 'évier' and bathroom 'lavabo'
