LE FEUILLET PLISSE BETA = STRUCTURE SECONDAIRE DES PROTEINES
La structure secondaire est le deuxième niveau d'organisation structurale des protéines. Il en résulte la structure tridimentionnelle d'une partie de la protéine. Certains segments de la chaîne peptidique sont enroulés ou repliés de façon répétitive et forment ainsi des motifs qui contribuent à la conformation globale de la protéine. L'ensemble de ces motifs constituent la structure secondaire et provient de liens hydrogènes situés à intervalles réguliers le long de la chaîne peptidique. Il existe 2 grands types de structures secondaires: le feuillet plissé béta et l'hélice alpha.
