J'ai trouvé une bonne définition sur un site, mais ne trouve pas de terme en français (le GDT parle de "coudes") :

"The county has a strong tradition of cruck-framed houses, most of which date to before 1450. These structures use massive cruck blades, cut in pairs from single, curved trees, to support the roof. Many houses in Weobley and Pembridge have this form of construction."

Charpente sans poinçons: les arbalétriers sont remplacés par des poutres naturellement courbes, ce qui permet de se passer de poinçons Il n'y a pas d'équivalent aux termes anglais "cruck", "cruck truss", "cruck blade" ou "cruck frame."

La maison de Boarhunt, Hampshire
La maison de Boarhunt date du début du XVe siècle. Il s’agit d’un exemple, petit mais très bien construit, d’une salle basse médiévale à charpente apparente. La particularité principale du bâtiment est la ferme de charpente centrale de la salle basse, un exemple du type de construction dit «cruck». Un «cruck», c’est un arbelétrier courbé posé au sol pour soutenir la charpente. L’espace à droite de l’entrée était certainement destiné au service. La chambre à l’extrémité de la salle est une reconstitution d’une chambre principale médiévale.
