neutral Francoise St Marc: je crois qu'en français on utiliserait plutôt le mot (d'origine anglaise d'ailleurs) rumsteck ou romsteck, la croupe c'est la partie du boeuf d'où proviennent ces morceaux)

  -> what if it's the whole rump or hide of beef? rumsteck and romsteck do not figure in the Multidico du Québec, I've never seen those words... but if it is indeed a steak, and not the whole haunch as I imagine it, OK (I am a farmer, eh)
