Explanation:
Pas très élégant mais apparemment d'autres l'ont fait (même référence que pour l'autre question), j'aurais tenté "température de brûlé" pour expliquer que c'est là qu'apparaît le goût de brûlé.
La marque Barry est à ma connaissance la plus utilisée des professionnels, reste à savoir si la brochure est écrite par quelqu'un d'aussi compétent que ses lecteurs, mais au moins l'expression est attestée.

Je crois que le terme \"combustion\" ne convient bien aux realites de cuisine etant d\'une maniere general un terme technique.
Quant\'a \"fusion\", la fusion de beurre n\'est pas la meme chose que la combustion ou la brulage de ce produit-la. :)
