When you muddle an ingredient for a coktail you put it in the glass first and press it with a tool, for instance the mint leaves for a mojito are "muddled" In this case I'm would think it would be small pieces of watermelon that are put in and pressed. Muddling gives a more heterogeneous texture than blending or using a fruit press.
