pois secs (variété pois vert ridé)
Explanation:
Marrowfat peas are peas that are allowed to reach maturity and dry out in the field before they are harvested, which means that they are a lot larger than the everyday 'petits pois'. In the UK marrowfat peas are traditionally used for canning, or crushed into mushy peas.

It depends on the type of document that you are translating as to how much detail you need to give. For a menu, I'm sure pois secs would suffice. For a recipe you may need to use pois secs verts to differentiate from the yellow pea variety for example. If a more precise translation is required, then you will need to mention the variety and perhaps also the latin name, pisum sativum.

Asker: Hi jdm, are you saying their are two species of pea then ? the one I need is in effect the one used to make mushy peas , what would the dried version name be in this case because they're not just ordinary peas are they ? thanks !
