I've come across terms used like this in a catering course text book Odette Grille: 12:55pm Mar 3, 2007: Hi Tony - It is about cooking chicken on a grill. I think your critical control point is a good link (safety control to be sure meat is cooked) but that does not give me the French equivalent abbreviation. Thanks for the lead though !

Could be the FR acronym for a specific skill that is to be acquired / applied at this stage (if this is in some kind of training context?)
Could it be a local abbreviation for the place where you need to go and do this (i.e. the place where the ovens are? Professional / training kitchens often have separate prep. and cooking areas...

That would tie in well with 'minimum internal temperature' — how else would you know that unless you were checking it with a food temperature probe? |
