On grille du poulet 3mn de chaque côté, puis cette phrase, qui commence par une abbréviation...mystérieuse

Tony M: 11:32am Mar 3, 2007: What kind of document is this, Odette? Is it some kind of training manual? I've come across terms used like this in a catering course text book
Odette Grille: 12:55pm Mar 3, 2007: Hi Tony - It is about cooking chicken on a grill. I think your critical control point is a good link (safety control to be sure meat is cooked) but that does not give me the French equivalent abbreviation. Thanks for the lead though !

Critical Control Point (could be the English acronym, for a key point in the process at which some kind of check needs to be performed)

Certificat de Compétence Professionnel

Could be the FR acronym for a specific skill that is to be acquired / applied at this stage (if this is in some kind of training context?)

Could it be a local abbreviation for the place where you need to go and do this (i.e. the place where the ovens are? Professional / training kitchens often have separate prep. and cooking areas...

That would tie in well with 'minimum internal temperature' — how else would you know that unless you were checking it with a food temperature probe?

I still do not know for sure, but, I'll keep you informed.
Thanks. I chose to replace with a sentence Température interne minimale (at least I am sure that is what they are checking)
