Explanation:
Dark chocolate is the purest one.
Light chocolate is mixed with milk (well, only in this context, according to the colour).
I don't think that they speak about sugar free chocolate here (chocolat light - allégé).
I think that it's milk chocolate ("... Can make white and dark chocolate at the same time" = light in the colour too).
