I've had cheddars that have knocked me over, they're so strong in flavour. Of course, there are mild cheddars too, and then there are cheddar-flavoured snacks that barely taste of cheese at all

I certainly wouldn't say Cheddar was 'wimpy', Tim! Like many matured cheeses, it does come in a variety of strengths.

I've certainly had Cheddars that are pretty strong, although I agree with Tony from the standpoint cheddars in general have a reputation as whimps! So as an alternative, one could say "bien parfumé" or "agréablement parfumé" or even "pleinement parfumé", which might seem a little less so than "fortement."
