Amine formée dans l'épiphyse à partir de la N-acétyl sérotonine, grâce à une enzyme spécifique de cette glande : l'HIOMT (5 hydroxy-indol-O-méthyl transférase).

Note(s) :
La mélatonine aurait deux propriétés : 1) inhiber certains facteurs de libération (releasing hormones), en particulier ceux responsables de la stimulation des gonadotrophines; 2) agir comme antagoniste de la MSH au niveau des mélanocytes
