Si le sens recherché est celui d'une persone qui a vécu une expérience et y a survécu, alors "survivant" est correct. Si l'approche du texte porte plutôt sur un personnage haut en couleur, qui a vécu une longue expérience de coups durs alors il s'agit plutôt d'un "dur à cuire".
