Sensory Evaluation of Bowl Life
Bowl life is a measure of the moisture absorbed by the cereal causing a change in texture. A sensory panel with 18 members compared the bowl life of cereal samples taken from Formulation #1 (Puffed Corn Type). The "Control" formulation was compared to formulation "1D" containing VersaPRO. Cereal samples were submersed in milk and evaluated at 5 and 10 minutes. The texture was rated on a 15 point scale for hardness (Figure 1). The dry control cereal was used as the reference or anchor on the scale. It ranked a 15. Panelists were asked to place the dry cereal between incisors and bite down evenly as a reference. When appropriate, panelists were asked to bite into each sample and use the scale to mark the hardness of the sample in comparison to the reference.
