I found this translation in the Grand Dictionnaire Terminologique with the following definition:
offset
offset n. m.


Définition :
"A printing process so called because the plate does not print directly onto the paper (as in most processes) but onto an extra cylinder covered with a rubber blanket, from which the ink is transferred onto the paper ((...))."

Définition :
Procédé de reproduction utilisant le principe de la lithographie mais dans lequel le dessin est imprimé d'abord sur un rouleau en caoutchouc avant d'être reporté sur le papier.
Procédé d'impression par lequel l'image encrée du support imprimant (une plaque de métal gravée) n'est pas reportée directement sur le papier mais d'abord sur un cylindre recouvert d'une feuille de caoutchouc (dite « blanchet »), à partir duquel l'encre est transférée sur le papier.

Note(s) :
Ce procédé de double décalque permet de tirer plus vite sur des papiers de qualité moyenne. Il se fait au moyen d'une machine rotative.
L'offset semble avant tout une technique d'impression qui a été appliquée, dans une large mesure, à la lithographie. Peu à peu, la technique et le procédé d'impression ont apparemment été confondus au point que les termes offset et lithographie sont devenus presque synonymes dans l'usage. Plus tard dans l'histoire, la photographie a également été appliquée à la lithographie qui se faisait déjà presque uniquement en offset. Le même phénomène d'assimilation semble s'être produit : offset est aujourd'hui souvent employé en synonyme de photolithographie, comme il l'est encore en synonyme de lithographie.

disagree  Michael GREEN: No - it is not talking about the printing process, but the unwanted transfer of ink during printing or (in this case) when the printed matter comes into contact with another object or material
