"The nightly rate is based on single occupancy, if you require double occupancy an additional cost of $50 + taxes will be applied"

Hotel preferential rates for participants to a convention.

Could it simply be "tarif de nuit"?

C'est le terme approprié. Le reste (par nuit, etc...) sera évidemment compris mais le mot utilisé par les hôteliers français est bien "nuitée".
