Ich hab diese Überschrift mit "Küche zum Mitmachen" übersetzt, bin aber noch nicht ganz zufrieden damit. Andere Ideen?

The lessons typically include instruction in the selection of ingredients and hands-on cooking demonstrations, during which participants learn how to blend fresh herbs and spices and use traditional utensils such as the pestle and coconut grinder.

Explanation:
Ist zwar etwas freier und klingt passiver, entspricht aber wohl der Situation (denn so viel Eigenständigkeit werden die Lernenden ja wohl nicht haben können) und enthält die Andeutung eines besonderen Erlebnisses, die in dem Wort "cuisine" steckt.
