English term or phrase: cage bone
4 large chicken leg quarters, ***cage bone*** attached.

Rippenknochen
Explanation:
The "cage" refers to the rib cage of the bird, and as the recipe uses "bone" in the singular, I would imagine that this is only one bone from the rib cage (logically the one nearest the top of the thigh). Leaving this on provides a wider and slightly meatier top to the leg.

Wikipedia has quite a good picture of a bird's skeleton:

http://www.kitchenminions.com/2010/12/evil-chicken-legs.html
I opened the package and discovered that a “leg quarter” did not end at the thigh, but appeared to include part of the chicken rib cage.

Brustkorb

Explanation:
Kann es sein, dass es sich hier um einen Teil des Brustkorbes handelt, also etwa, wenn das Huhn geviertelt verkauft wird (leg quarter with backbone, siehe http://www.bbq-brethren.com/forum/showthread.php?t=103426)

Example sentence(s):
  • A leg quarter contains the thigh, drumstick and a portion of the back; a leg has the back portion removed.
