In a ‘default land user strategy’ ruminants (cattle, sheep, goats) feed on grassland that is unfit for arable production and pigs and poultry are fed from residues such as food processing wastes, crop residues and food waste. Sustainable livestock are default land users i.e. they don’t monopolise land that is required for other intrinsic elements of the ecology and they don’t compete with humans for food. Their role is to mop up wastes (e.g. pigs & poultry), residues, surpluses and marginal biomass (Fairlie, 2010). In an ‘active land user strategy’ livestock is competing with other sectors for the establishment of feed crops, intensive pasture and production (Fairlie, 2010)
