English term or phrase: overdubbing
"Some digital camcorders have two stereo tracks for
audio. One is recorded at the time of shooting; the
other is for *overdubbing* after shooting.
On the Audio 1 setting, the sound that was recorded
while shooting is used."

Überdubbing???

nachsynchronisieren
Explanation:
I would try it with "nachsynchronisieren". It does not sound so technical and is therefore easier to understand for the user. It is a manual, isn't it? It only means that you can add the desired audio (voice, sounds, music...) later as opposed to setting No.1, where you use the audio from the actual recording.

überspielen / synchronisieren

Explanation:
Perhaps one of these two terms serves your purpose.
Synchronisieren = "dub" as in a movie
Überspielen = to copy over

Overdub machen/Aufnahme im Overdub-Verfahren

Explanation:
Durchaus üblich in Fachkreisen, denn die Beschreibung ist kompliziert ("Ergänzung bestehender Spuren durch bachträgliches, taktsynchrones Aufnehmen neuer, zusätzlicher Spuren.").
